OVEN BAKED MEATBALLS IN TOMATO SAUCE

We've taken a firm family favourite and given it an easy. cheesy twist. You'll add broken spaghetti and tangy tomato sauce to an ovenproof dish. top with meatballs and cheese. and bake until golden. Delicious!

  • 250g lean beef mince (5% fat)

  • 2 garlic cloves peeled and finely chopped

  • 2 red onions peeled and finely diced

  • 1 beef stock cube

  • 1 tsp dried oregano

  • 2 tbsp tomato puree

  • 1 can chopped tomatoes

  • 1 tbsp balsamic vinegar 5g basil, roughly chopped

  • 150g spaghetti, dried broken into thirds

  • 5g parsley, chopped

  • 80g reduced-fat cheese (240kcal) grated


Prepare your ingredients

Preheat the oven to 200 °C (180 °C fan, gas mark 6) boil a kettle and prepare your ingredients

1. Combine the mince with half of the grated garlic and a generous pinch of salt and pepper and give everything a good mix up until fully combined

Divide the mince into 6 and shape into meatballs - these are your meatballs

2. Heat a large, wide-based pan with a light misting of low-calorie cooking spray over a medium-low heat

Add the meatballs to the pan and cook for 4-5 mins, turning frequently, until they're browned all over, then transfer to a plate

3. Lightly mist the pan with low-calorie cooking spray and turn the heat up

Once hot, add the onion and remaining garlic with a pinch of salt and cook for 6-7 mins until softened

and slightly caramelised

4. Dissolve the beef stock cube in 200ml boiled water

Add oregano and tomato puree to the onions and cook for 1 min

Then add the chopped tomatoes, beef stock and the balsamic vinegar and cook for 2-3 mins or until the sauce has slightly thickened

5. Once the sauce has thickened, add half of the chopped basil, a pinch of salt and a very generous amount of black pepper

Add the spaghetti and 150ml boiled water and give everything a good mix up

6. Add the sauce and spaghetti to an oven-proof dish

Place the meatballs on top and put in the oven for 20 mins - this is your spaghetti & beef

7. Remove the dish from the oven after 15-20 mins and top with the cheese

Return to the oven and cook until the cheese has melted

Garnish with parsley and serve
