SLOW-COOKER BBQ PULLED PORK

A succulent, smoky, Southern style pulled pork. You'll cook pork smothered with a rich and tangy sauce in a slow cooker.

Power Foods

  • 500g passata

  • 5 tbsp Worcestershire sauce

  • 3 tbsp balsamic vinegar

  • 1 tbsp mustard powder

  • 2 garlic cloves, peeled and finely chopped

  • 3 tbsp sweetener

  • 1.5-2kg pork shoulder, visible fat removed


Boil a kettle and prepare your ingredients

1. In a small pan add the passata, Worcestershire sauce, balsamic vinegar, mustard powder, garlic, sweetener and a pinch of salt and black pepper

Give everything a good mix up and simmer for 15 mins until thickened - this is your BBQ sauce

2. Heat a large, wide-based pan with a generous amount of low-calorie cooking spray over a high heat and lightly brown the pork on all sides

3. Transfer the pork to a slow cooker, coat with the BBQ sauce and cook for 8-12 hrs on low

4. When cooked, remove the pork from the slow cooker and allow to stand for 15 hrs on low


5. shred the pork using two folks - this is your pulled pork

Tip: This works really well with salad or in a roll of your choice. Don't forget to count the roll if you choose to use one
