SLOW-COOKER BEEF STROGANOFF

Your home will be filled with the rich, smoky aroma of stroganoff. You'll cook beef, onion, mushroom, and garlic until browned, before transferring to a slow cooker until the steak becomes so tender it falls-apart.

Power Foods

  • 1 beef stock cube

  • 500g lean stewing steak, and diced into bite-sized pieces

  • 1 onion peeled and finely chopped

  • 4 garlic cloves, peeled and finely chopped

  • 2 tsb Worcestershire sauce

  • 300g mushrooms, sliced

Counted Ingredients

  • 180g light soft cheese (260kcal)

  • 1 tsb Dijon mustard (30kcal)

  • 1 tbsp wholegrain mustard (20kcal)


Boil a kettle and prepare your ingredients


1. Dissolve the stock cube in 200ml boiling water - this is your stock


2. Heat a large, wide-based pan with a generous amount of low-calorie cooking spray over a medium heat

Add the onion, cook for 3 mins until soft, then add the garlic and mushrooms and give everything a good mix up


3. Next add the steak and cook until browned - your steak won't be cooked yet


4. Transfer the steak, onion, garlic and mushrooms to a slow cooker

Add the Worcestershire and the stock


5. Cook on low for 6-7 hrs


6. Around 30 mins before serving , add the soft cheese and mustard to the show cooker and give everything a good mix up


7. Cook for another 30 mins and serve
