6 eggs
100g fat-free cottage cheese
1/2 courgette grated
3 bacon medallions finely diced
1 red onion peeled and finely chopped
1Og of spinach finely chopped
2 large mushrooms finely chopped
Prepare your ingredients
Preheat the oven to 200 °C (180 °C, gas mark 6) and prepare your ingredients
1. Spray a muffin tray with a generous amount of low-calorie cooking spray
2. In a large bowl add the eggs with the cottage cheese, a pinch of salt and black pepper and give everything good mix up - this is your egg mixture
3. Heat a large, wide-based pan with a light mist of low-calorie cooking spray
Add the courgette, bacon, red onion, spinach and mushrooms and cook for 3-4 mins
4. When cooked, add to the egg mixture and give everything a good mix up - this is your muffin mixture
5. Pour equal amounts of the muffin mixture into the tray
6. Cook for 20 mins until set and golden
