A twist on pasta that's perfect for a quick lunchtime meal. You'll pack pasta with vegetables and lean cuts of ham in a mustard dressing. What's not to like!

  • 200g pasta, dried

  • 200g lean ham, fat removed roughly diced

  • 1 red pepper diced into bite-size pieces

  • 1 green pepper diced into bite-size pieces

  • 200g sweetcorn canned

  • 6 tbsp fat-free yoghurt

  • 1 tsp mustard powder

  • 10g fresh parsley, chopped

Prepare your ingredients

1. Put the pasta into a saucepan of boiling water and cook for 6-7 mins until the pasta is al dente Once cooked, drain the pasta and add to a large bowl to cool

2. In a small bowl add the yoghurt and 3/4 of the parsley with a generous pinch of salt and black pepper and give everything a good mix up - this is your dressing

3. Add the dressing to the pasta along with the ham, peppers and sweetcorn then give

everything a good mix up

Sprinkle the remaining parsley over the top and serve
