SHAKSHUKA

A comfort breakfast that's ZeroCount™. You'll crack eggs in tomato sauce with peppers, onions and spices. Delicious!

Power Foods™

  • 1/2 onion, peeled and finely chopped

  • 1 red pepper, chopped

  • 1 garlic clove, peeled and finely chopped

  • 1/2 tsp ground cumin 1/4 tsp mild chilli powder

  • 200g chopped tomatoes canned

  • 1/2 tsp sweetener

  • 1/4 tsp lemon juice

  • 50g spinach

  • 5g fresh parsley or coriander chopped

  • 2 eggs


Prepare your ingredients

1. Heat a medium, wide-based pan with a generous amount of low-calorie cooking spray over a medium heat

2. Add the onion and pepper and cook for 4-5 mins, then add the garlic and cook for another 4-5 mins

3. Next add the cumin, chilli powder, tomatoes, sweetener and lemon juice Cook for 3 mins, stirring occasionally

4. Add the spinach, add a pinch of salt and black pepper and turn the heat to low Cover the pan with a lid and cook for 5 mins - this is your tomato sauce

5. Now make two wells in the sauce and crack an egg into each one.

Add a pinch of salt and black pepper to each egg, cover the pan and simmer over a low heat for 8-10 mins
