When the moon hits your eye like a big pizza pie that's this recipe! You'll create this all-time favourite by adding a rich tomato sauce and melted mozzarella to a skinless chicken breast.

2 chicken breasts
2 tbsp tomato puree
1 tsp sweetener
1/2 tsp dried oregano
5g basil, torn roughly
100g baby leaf salad 125g cherry tomatoes, halved
1/2 cucumber, sliced finely
1 shallot, peeled and very finely sliced

125g reduced-fat mozzarella (230kcal)
Prepare your ingredients
Preheat the oven to 220 °C (200 °C fan, gas mark 7) and prepare your ingredients
1. Put the chicken breasts onto a tin foil-lined baking tray
2. In a bowl mix the tomato puree, sweetener and the dried oregano with 1
tbsp cold water - this is your pizza sauce
3. Drain the mozzarella, then pat it dry with kitchen paper (squeeze as much liquid out as
you can!)
Tear the drained mozzarella into rough, bite-size pieces
4. Spread the pizza sauce over the chicken breasts and top with the torn mozzarella and
torn basil leaves
5. Put the tray in the oven for 15-20 mins or until the chicken is cooked through (no pink
meat!) and the mozzarella is melted and golden - this is your cheesy pizza-topped
chicken
6. Add the tomatoes, cucumber and shallot to a large bowl with the baby leaf salad and give it a good mix up - this is your mixed salad
Serve the cheesy pizza-topped chicken with the mixed salad to the side
