A classic soup that is a brilliant go-to lunch. You'll cook peas with fresh mint and load with chunks of ham. Great to keep in your fridge or take with you to work.

  • 1 vegetable stock cube

  • 1 large onion peeled and finely chopped

  • 240g potatoes peeled and diced into bite-size pieces

  • 2 garlic cloves peeled and chopped

  • 500g frozen peas

  • 5g fresh mint leaves, chopped

  • 200g lean ham, visible fat removed diced into bite-size pieces

Prepare your ingredients

Boil a kettle and prepare your ingredients

1. Dissolve the stock cube in 1.2 litres of boiling water - this is your stock

2. Put the onion, potato and garlic in a large saucepan

Pour in the stock and bring to the boil

3. Reduce the heat to low and simmer for 20 mins until the potatoes soften

4. Add the peas and cook for another 5 mins

Remove from the heat and add the mint

5. Blend the mixture until smooth

Add the ham and give everything a good mix up

Serve with any remaining mint
