1 small egg, separated
100g mixed berries fresh or frozen
6 tbsp low-fat natural yoghurt

50g self-raising flour (175kcal)
75ml skimmed milk (30kcal)
Prepare your ingredients
1. Sift the flour into a bowl then add the egg yolk and a splash of milk Stir to make a thick paste
2. Add the rest of the milk a little at a time and give everything a good mix up, until smooth
3. Whisk the egg white to form stiff peaks, then fold carefully into the mixture - this is your batter
4. Heat a wide-based pan with a light mist of low-calorie cooking spray over a medium heat
5. Pour in enough batter to make a small pancake Cook for I min and then carefully turn over and cook for another I min Repeat to use all the mixture
Serve with the berries and yoghurt
