150g instant couscous, dried
4 tomatoes diced into bite-size pieces
1/2 cucumber diced into bite-size pieces
1 red pepper diced into bite-size pieces
1⁄2 red onion peeled finely chopped
5g fresh parsley, chopped
5g fresh mint, chopped
5g fresh basil, chopped
1/4 tsp dried oregano
1 lemon, juiced and zested
1 tbsp white wine vinegar
Prepare your ingredients
Boil a kettle and prepare your ingredients
1. Put the couscous into a heatproof bowl and add 250ml of boiling water
Let the couscous stand for 5 mins until tender, then fluff with a fork and let it cool
2. Once the couscous has absorbed the water add the tomatoes, cucumber, pepper, red
onion, parsley, mint and basil and give everything a good mix up - this is your couscous
salad
3. In a small bowl whisk together the lemon zest, lemon juice, vinegar, with a pinch of salt
and black pepper - this is your dressing
To serve, pour the dressing over the couscous salad and give everything a good mix up
